Caribbean Black Bean Salad

Black beans, tomatoes, corn and cucumbers are tossed with a cilantro-lime dressing for a flavorful taste of the islands. To round out the meal, serve on a bed of mixed salad greens.

Ingredients

3 cups cooked black beans or 2 (15 ounce) cans no-salt-added or low-sodium black beans, drained
1 cucumber, chopped
1 medium tomato, chopped
4 scallions, thinly sliced
1 cup fresh or thawed frozen corn
1 lime, juiced
1/2 bunch cilantro, chopped
1 clove garlic, chopped
2 tablespoons rice vinegar
1 teaspoon Dr. Fuhrman's Mato Zest or other no-salt seasoning blend, adjusted to taste

Instructions:

In a large bowl, combine black beans, cucumber, tomato, scallions and corn.

Combine remaining ingredients in a high-powered blender. To adjust consistency, 1-2 tablespoons water may be added.

Toss desired amount of dressing with black bean mixture.

Bursting with flavor. Delicious. Good to the last bite.  Leftovers will make a great lunch on the go. We'll try it in a pita, good idea!

This is fairly easy, and absolutely delicious,  I tracked the recipe as written, and provided with each serving serving  a whole wheat pita half -- this is quite nice stuffed in a pita with more of the salad on the side.  Don't bother trying to make the dressing in a Vitamix, because there isn't enough volume.  I used a small Cuisinart (the size used to chop herbs) instead.  Failing that I'd mince the heck out of your cilantro and whisk the dressing.

just a general comment.   looks like a great recipe.  could servings be stated in cups, instead of just saying serves 4. thanks

This was so yummy and fresh. I'd nearly triple the garlic next time tho.

This dressing is really good! If people are finding it overpowering or hard to blend then add WATER not more vinegar, like the recipe suggests. I added an additional 2 TBS water and my Vitamix did well. This is a light and refreshing salad; very easy to prepare. I added a few heads of romaine lettuce to mine, but it would be excellent in pita pockets!

Just a FYI, the ingredients that are needed for the high powered blender wasn't enough volume for my blender to actually blend everything. Even when using the tamper.

Fantastic. This salad was easy to make, delicious and could easily be modified. We had some artichoke hearts left over from the artichoke lentil loaf. We threw the artichokes in and added some hearts of palms. I bet avacado would also taste good in the salad

Made this last Saturday. So delicious and fresh tasting. Next time I will use just a little less cilantro. I think it even tastes better after it has been in fridge for a day or two.

Delicious and very easy to make. I didn't have Mato Zest, so I used some Mrs. Dash. A great lunch option.

I like this a lot. Good in pita pockets or topping for green salad. I increased the lime juice and used rice vinegar infused with my neighbor's kumquats.
