Quick and Creamy Vegetable Bean Soup

This easy soup uses prepared low sodium tomato soup as a starter. When it is finished cooking, a portion is blended with raw cashews for a rich, creamy flavor and texture.

Ingredients

4 cups prepared no-salt-added or low sodium tomato soup
2 cups frozen broccoli florets
2 cups frozen chopped spinach
2 cups carrot juice
1 cup chopped onions
4 1/2 cups cooked cannellini beans or 3 (15 ounce) cans no salt added or low sodium, drained
3 fresh tomatoes, chopped
1 bunch fresh basil, chopped
4 tablespoons Dr. Fuhrman’s MatoZest or other no salt seasoning blend, to taste
1 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 cup raw cashew nuts
1/4 cup pine nuts

Instructions:

In soup pot, combine all ingredients, except cashews and pine nuts. Cover and simmer for 30-40 minutes.

In high powered blender, blend 1/4 of soup mixture with cashew nuts. Add back to soup pot.

Serve with pine nuts sprinkled on top.

Tasted great.  I was hesitant to add a bunch of basil, fearing it would turn black.   I chopped it quickly and added it to a boiling pot and it didn't have time to oxidize.  I seasoned a bit to my liking and added an extra ba of frozen broccoli.

The best soup I've ever had! Will be making this one again and again but will add more spinach and broccoli. Next time I'll add mushrooms to it.

This was a pretty good soup.  I would give it 4 out of 5 stars just barely.  It had good, rich flavor and held up well for lunch the next day.

I'm a southerner too. Okra is very healthy. We eat it a lot in our house. I'll bet you could add it to any of the soup recipes.

I never see Okra added to any of the soup recipes. Is it a relatively unhealthy veggie? As a Southerner (USA), it is an essential :-) ingredient to most of our recipes.

My boyfriend asked for a "vegetable soup" and I made this. He said it tasted good, but didn't like the creamy texture or the color. He said it was too sweet. This may be from the cashews. I liked it, it's very good. I didn't add the pine nuts because for their expense, they are only used as a garnish. I recommend it if you like a creamy, hearty soup.

This has such wonderful flavor! Definitely use fresh basil! I grow my own. :)

I used fresh garlic instead of powder. I also added extra broccoli.

It's on the stovetop now and I will be adding sliced mushrooms and the beans at the last 5 minutes of cooking.

I won't be using the pine nuts because the cashews are enough for fat content and flavor.

I think I like this even better than the Golden Austrian Soup. :)

YUM I followed the recipe exactly (except for VegiZest as we don't have it in Oz yet) but this was such a hearty flavoursome soup! I was expecting it to be bland and boring..but very very very tasty - even hubby who only likes things extra spicy and hot loved this non-spicy soup! WIll def make it again.

Love this soup. It's tasty and hearty. It was a big hit with DH too, who does not follow ETL. I used fresh onions and garlic and added 8oz of crumbled mushrooms. I think I'll add at least another 2C of green veg next time. There will definitely be a next time!

Wonderful tasting, easy to make soup! I increased the broccoli and spinach to 3 cups each and I used fresh garlic and onion and homemade beans. This is a keeper.

It was delicious. I used Roasted Red Pepper/Tomato soup (low sodium), fresh garlic. I also added a package of shitake mushrooms and some corn. I used a variety of beans. Very thick and hearty.

non ETL people like it a lot. my honest neighbor even says so although he'd add some pepper to it he says. used 2 cans of pinto beans instead and fresh garlic instead of powder.

LOVED this recipe. Even my non - ETL husband loved this. My only change was using fresh onions, not frozen. I also used whatever beans were in the house, including a can of kidney beans (not just white).

Of all the soups I tried at the 2007 & 2008 Health Getaways, this is my favorite soup : )

And with both beans and vegetables is very healthy ! I also like adding mixed frozen vegetables.

Many people at the 2008 Health Getaway also commented how much they love this soup and several said it was their favorite soup at the Health Getaway.
